Jackfruit Flour Modak

Jackfruit flour is great flour replacement for diabetic patients with their low Glycemic Index & high fibre content.

Ingredients:
  • 1 cup jackfruit flour
  • A pinch of salt
  • 1 tsp oil
  • 1 tsp whole wheat flour

Filling:
  • 1 cup freshly grated coconut
  • 1/2 cup mixed dry fruits-coarsely ground almonds, walnuts, pistachios
  • 1 tsp organic jaggery
  • 1/4 tsp cardamom powder
  • 1 tsp ghee
  • a pinch of salt

Method:
  • For the cover - Knead the flour into a smooth dough. Apply a little oil & let it rest for 30 minutes.
  • Filling - Heat ghee & saute the coconut till it becomes light brown.
  • Add jaggery, dry fruits, cardamom & salt. Saute for about 2-3 minutes till it mixes well, take it off the flame & let it cool.
  • Making Modaks: Roll our small dough balls into small round rotis. Place a spoonful of the filling in the centre & gather the edges of the roti towards the centre.
  • Pinch the centre to ensure it seals
  • You can use a toothpick to create slight indentations on the sides for a better shape!
  • Place them on banana or Turmeric/Haldi leaves
  • Place the leaves in a covered sieve over a pot of boiling water or place inside a steamer/cooker for 10-15 minutes.
  • Eat with some 1/2 tsp ghee drizzled over the hot steaming modaks!
