Jackfruit flour is great flour replacement for diabetic patients with their low Glycemic Index & high fibre content.
Ingredients:
1 cup jackfruit flour
A pinch of salt
1 tsp oil
1 tsp whole wheat flour
Filling:
1 cup freshly grated coconut
1/2 cup mixed dry fruits-coarsely ground almonds, walnuts, pistachios
1 tsp organic jaggery
1/4 tsp cardamom powder
1 tsp ghee
a pinch of salt
Method:
For the cover - Knead the flour into a smooth dough. Apply a little oil & let it rest for 30 minutes.
Filling - Heat ghee & saute the coconut till it becomes light brown.
Add jaggery, dry fruits, cardamom & salt. Saute for about 2-3 minutes till it mixes well, take it off the flame & let it cool.
Making Modaks: Roll our small dough balls into small round rotis. Place a spoonful of the filling in the centre & gather the edges of the roti towards the centre.
Pinch the centre to ensure it seals
You can use a toothpick to create slight indentations on the sides for a better shape!
Place them on banana or Turmeric/Haldi leaves
Place the leaves in a covered sieve over a pot of boiling water or place inside a steamer/cooker for 10-15 minutes.
Eat with some 1/2 tsp ghee drizzled over the hot steaming modaks!
