Drumstick/ Moringa Leaf Paratha

Moringa leaves (Known as Shahajan in Hindi) have 7 times more vitamin C than oranges and 15 times more potassium than bananas. It also has calcium, protein, iron, and amino acids, which help your body heal and build muscle. It's also packed with antioxidants, substances that can protect cells from damage and boost your immune system.

To use gluten free flours, use roasted gram flour, buckwheat flour, Jowar(Sorghum), Millet, Rice Flour, Amaranth, Quinoa flour or Ragi

Ingredients:
  • 1 cup whole wheat flour
  • 1 cup Drumstick/ Moringa leaves
  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/4 tsp garam masala powder
  • 1/2 tsp red chili powder
  • 1/2 tsp amchur powder (Dry mango powder)
  • 1/4 tsp sesame seeds
  • 1/4 tsp flax seeds
  • 1 tbsp oil
  • Salt to taste
  • Oil/ghee for roasting parathas

Method:
  • Rinse and roughly chop the cleaned drumstick leaves.
  • In a bowl, take the whole wheat flour and add the roughly chopped drumstick leaves. Sprinkle salt, turmeric powder, red chili powder, amchur powder, cumin powder and garam masala powder, sesame seeds, flax seeds and mix well.
  • Make 4-5 small balls of the dough.
  • Roll the dough into thin rotis or flat roundels.
  • Meanwhile, heat a tawa or griddle on medium flame. Place the rolled paratha on the hot tawa. When the paratha has cooked for a few seconds, flip over and cook the other side. Apply little oil and gently press the paratha with a spatula in order to cook the parathas evenly on both sides.
